Gobbledygook

FYI ~ PRICE CHOPPER HAS BONELESS SKINLESS CHICKEN BREAST FOR $1.19/LB. STOCK UP!!!!!

~ I love chicken. A lot! I have noticed that my menu usually includes mostly chicken. My sweet hubby never complains, but I know he would rather have BEEF! :)

~ That salsa I made on Monday was awesome! It was oh so good. Hubby and I ate the entire bowl for dinner. I soaked my tacos in it, and dipped chips in it. I don't think I will ever buy jarred salsa again. It actually tasted pretty close to Jose Pepper's salsa.........just so you know! :)

~ I am still working on a menu. I am tired of fixing the same things over and over. I don't mind it so much, but I'm sure my family would like a little more variety. Apparently I need to head over to my friend Alisa's, and look at her cookbooks! :)

~ My sweet baby is still sick. This is her first illness so far, and it is hanging in there. I just hate seeing her sick.

~ What is your family's favorite meal??

Menu.........

I haven't been posting a menu because I haven't been much of a cook lately. Meals around here have been mostly hodgepodge for the past couple of weeks, due a tired mommy from the girl not sleeping all night....... However, with Hubby's hours at work increasing, I decided it would be nice for him to come home to a nice meal. I haven't gotten it all in order yet, but tonight we are having chicken tacos with fresh salsa. I made the salsa early so that the flavors would have time to get all mixy in the fridge all day. It is so yummy, I can't wait to eat it tonight....if it makes it that long! :)

Fresh Salsa

1 lb tomatoes; cored and chopped
1 jalapeno pepper; finely chopped
3 cloves garlic; finely chopped
1 med red onion; finely chopped (are you noticing a pattern here??)
1 cup of cilantro; finely chopped (I LOVE cilantro, so I use more)
3 T. lime juice
1 T. olive oil
salt and pepper to taste.

If you didn't chop it finely enough, you could always throw it in the food processor. :)

Happenings

~ Have you seen the girl lately??

~ I went outside today without a jacket on. That makes me happy. :) This is supposed to be a week of 50s, so the snow is on it's way out of here. It's pretty and all, but I'm over it for this year.

~ I like to watch TV before bed. We don't have cable in our bedroom, so I usually watch TV shows on DVD. I got into a cycle of the first 3 seasons of Big Bang Theory (if you haven't watched it yet, please do :) over and over again. I mentioned to my friend Megan that I was looking for something new to watch, and she said she has all 7 seasons of Gilmore Girls. Hmmm I had never watched that show when it was on, but her and I have similar tastes in TV shows and the like, so I figured what the heck. The first couple of episodes, I wasn't overly impressed, but I kept watching. I am now on Season 4 and have a hard time not sneaking back to my bedroom to watch during the day. I'm a little addicted to those kookie girls. :)

~ The men folk in my family went to Monster Jam on Friday, leaving just me and the girl. I took that opportunity to call a friend and have some girl time. Alanna came over and we moved the couch in front of the TV, watched a movie, ate pizza and ice cream and had just chatted. It was so much fun. :)

~ Speaking of girl time, this Friday Emilee and I are going to a women's retreat at camp where my sweet red-headed friend is speaking. I am super excited, although I am a bit nervous about being gone over night. I am pretty sure Hubby and I haven't ever spent the night apart since we got married. Even when I was in the hospital having babies and such, he stayed there with me. I know I will have a good time, but I'm already thinking of ways to get out of it.

In other news.......

~ I found the perfect smoothie! I love it.

1 1/2 cups frozen berry mix
1 banana
1 extra handful of blueberries
1 handful of fresh spinach
1 cup lowfat vanilla yogurt (if I am out of yogurt I use applesauce and add a little milk)
1/2 T. ground flax seed

I mix all that together then add ice. SO GOOD!

~ I am making my way thru Pride and Prejudice. It's going much slower than I would like, but so far it's pretty good! I may re-do my list and swap some books out.

~ Someone left a dress for Emilee at church. I don't know who it was, but thank you!! It is so cute. :)

~ Apparently the alternator is going out in the Suburban. Thankfully I know a good mechanic! :)

~ We are thinking about replacing the Suburban. We both love it, but with the whole crying thing every time we have to put Jason's paycheck into the gas tank, we are ready to move on. We just don't know what we want. The practical thing to do would be get a minivan. However, we are both very anti minivans. I know lots of people have them and love them, but we just don't.
